Cheese tasting academy
Taste like a cheesemonger.
Use the wheel to put words to what you taste, then save a note. Notes stay in this browser — they are never public.
1. Temper
Take cheese out of the fridge 30–60 minutes before tasting (keep perishable cheese out no longer than 2 hours).
2. Look
Rind, colour, eyes or veins, crystals, moisture.
3. Smell
Break a piece and smell the paste, then the rind.
4. Taste
Let it warm on your tongue: first impression, then development, then finish.
5. Feel
Creamy, springy, crumbly, crystalline — texture is half the experience.
Inner ring: families. Outer ring: descriptors you pick fill in.
Flavour and aroma families
